farm fresh

i am lucky to live in an area where small, family farms abound. within a ten mile radius of my house, our family can pick strawberries, blueberries, blackberries, raspberries, peaches, pears and apples straight from the vine (or branch), assuming we hit the farms at the right time of season. and that's just the fruits.

so, with fall in full effect here in the mid-atlantic region, this week we packed up the kids and some friends and visited our favorite local orchard to pick apples. an hour later, our baskets were overflowing with braeburns, yorks, golden delicious, and reds. we headed home $17.50 lighter in the wallet, but for 17.5 pounds of hand-picked apples i'm sure not going to complain.





feeling inspired by the fruits of our labor (literally), i pulled out our absolute favorite seasonal recipe: apple crisp. the recipe is very easy to follow, requiring only a handful of ingredients. and even if you aren't living smack in the middle of farm country, you can always enjoy it with ingredients straight from your local grocer or farmer's market.

i made this recipe on the day that we picked our apples, and we all had it for dessert after dinner that evening. after bug licked his bowl clean (you think i'm kidding), he asked if next time he could just have the "crisp". it took me a minute to catch on that he wasn't interested in the apples so much as he was the topping. he must take after his auntie, who gave us this recipe several years ago. she has suggested doubling the topping portion of the recipe because she loves it so much.

from personal experience, i can recommend the crisp both hot from the oven (served with a scoop of vanilla ice cream) or cold straight from the fridge. don't expect leftovers to be around for long.



apple crisp

what you'll need: casserole dish, peeler, sharp knife, small bowls (2) and the following ingredients.

8 apples
1/2 cup sugar
1/2 cup water
dash of cinnamon
9 tablespoons flour
2/3 cup brown sugar
dash of salt
3/4 stick butter, softened
vanilla ice cream, optional

1. spray casserole dish with cooking spray
2. peel apples
3. slice apples, thinly
4. place apple slices in casserole dish
5. mix sugar, water and cinnamon in small bowl and pour over apples
6. mix flour, brown sugar, salt and butter in second bowl until crumbly (using hands)
7. sprinkle topping over apples
8. sprinkle cinnamon over topping
9. bake 40 minutes at 375 degrees
